🍖 For Mutton Marination

  • 500g mutton (with bones)

  • 1 cup curd

  • 2 tbsp ginger-garlic paste

  • 1 tsp red chilli powder

  • ½ tsp turmeric powder

  • 1 tsp garam masala

  • Juice of 1 lemon

  • Salt (to taste)

  • Handful of mint & coriander leaves


🍚 For Rice



  • 2 cups basmati rice

  • Water for boiling

  • Salt

  • Whole spices:

    • 1 bay leaf

    • 1 cinnamon stick

    • 4 cloves

    • 2 cardamom pods

  • 3 onions (thinly sliced & fried → birista)

  • 3 tbsp ghee

  • 3 tbsp oil

  • A few saffron strands soaked in milk


👩‍🍳 Step-by-Step Preparation



🥩 Step 1: Marinate Mutton

  • Mix the mutton with all the marination ingredients

  • Rest for at least 2–4 hours (overnight is best)


🍚 Step 2: Cook Rice (70%)

  • Boil water with salt & whole spices

  • Add basmati rice

  • Cook till 70% done

  • Drain and keep aside


🍲 Step 3: Layering (Kacchi Style)

  • In a heavy-bottom pot:

    1. Add marinated raw mutton at the bottom

    2. Add half-cooked rice over it

    3. Top with:

      • fried onions

      • mint & coriander

      • saffron milk

      • ghee


🔥 Step 4: Dum Cooking



  • Seal the lid (with dough if possible)

  • Cook on:

    • High flame → 5 minutes

    • Low flame → 35–40 minutes

  • Gently mix layers before serving
