Chettinad Chicken Fry
Chettinad Chicken Fry is a spicy and flavour-packed South Indian dish from the famous Chettinad cuisine of Tamil Nadu. It is prepared with roasted spices, curry leaves, and coconut oil for an authentic taste.
Ingredients
For Marination
500 g chicken
1 tsp turmeric powder
1 tsp chilli powder
1 tbsp ginger garlic paste
Salt as needed
Juice of 1/2 lemon
For Chettinad Masala
2 tbsp coriander seeds
1 tsp cumin seeds
1 tsp fennel seeds
1 tsp black pepper
4 dry red chillies
1 small cinnamon stick
3 cloves
2 cardamoms
Other Ingredients
2 tbsp oil or coconut oil
2 onions (sliced)
1 sprig of curry leaves
2 green chillies
Coriander leaves for garnish
Preparation Method
Step 1: Marinate the Chicken
Mix chicken with turmeric powder, chilli powder, ginger garlic paste, lemon juice, and salt. Marinate for at least 30 minutes.
Step 2: Roast the Spices
Dry roast coriander seeds, cumin, fennel, black pepper, red chillies, cinnamon, cloves, and cardamom until aromatic.
Step 3: Grind the Masala
Cool the roasted spices and grind them into a coarse powder.
Step 4: Cook the Onions
Heat oil in a kadai. Add curry leaves, green chillies, and sliced onions. Sauté until golden brown.
Step 5: Cook the Chicken
Add the marinated chicken and cook on medium flame.
Step 6: Add Chettinad Masala
Sprinkle the ground masala powder over the chicken and mix well.
Step 7: Fry Until Dry
Cook uncovered until the chicken becomes dry, roasted, and slightly crispy. Stir occasionally to avoid burning.
Step 8: Garnish
Garnish with coriander leaves and curry leaves.
